Around this time of year, the Zucchini's rise and take over. I fear if I have more then one unsliced in the house they will mate and create offspring to rule the kitchen and beyond. When I first moved to the ND, I considered planting Zucchini but quickly changed my mind when my coworkers started bringing herds of the beasts to the workie land. My brother and husband, not very fond of the Zucchini and its copious breeding standards. So far I have figured out how to turn them into lasagna and stir fry dishes. Some people apparently make cake and bread, I am not a huge fan of either of these.
Wiki describes the Zucchini as an "immature fruit, being the swollen ovary of the female zucchini flower." Which does not make it sound appetizing and makes it sound more of a candidate for Andrew Zimmern's Bizarre Foods. This swollen ovary is beneficial as "the zucchini fruit is low in calories (approximately 15 food calories per 100 g fresh zucchini) and contains useful amounts of folate (24 mcg/100 g), potassium (280 mg/100 g) and vitamin A (384 IU [115 mcg]/100 g. 1/2 cup of zucchini also contains 19% of the recommended amount of manganese."
Now if I can just figure out how to decrease the household's crews aversion to Zucchini. Nick likes to play with them and I recently sent a nice varied collection to my NE cousins. They make fine gifts! Nothing says I love you then a basket of "swollen ovaries!"
